Uocchi Ramen Koubou

Kushiro Ramen usually brings to mind light, soy-sauce based soup with thin noodles, but Ramen Kobo Uocchi is a little unique! This shop, published in the Michelin Guide Hokkaido, uses its own "Fish Soy" made with local mackerel pike and tops its ramen with heaps of local oysters and clams. Long lunch lines attest to its popularity. They often sell out, so go early!
